  • Preheat oven to 350˚F. Add 215 g sourdough starter discard, 45 g melted butter, 115 g Einkorn all-purpose flour and 6 g salt to a medium bowl and mix well. Cover and allow to ferment for 4-8 hours in a warm location. Divide dough into 3 equal portions and roll each portion out thinly between 2 sheets of parchment paper. Cut into roughly 1½” x 1½” squares, pierce with a fork, brush with melted butter and sprinkle with Maldon salt. Bake for 15 minutes (first batch), 13 minutes (next batch), 12 minutes (all remaining batches) until golden brown.
