Preheat oven to 325˚F. Lightly grease a 9x13 baking pan. In a large saucepan, melt 1 cup butter over medium heat. Whisk in 1 cup cocoa powder and 2 tbsp instant espresso powder, followed by 2 cups water and 2 cups granulated sugar, whisking each addition until smooth. Remove pan from heat and set aside to cool for about 5 minutes. In a medium bowl, combine 240 g all-purpose flour, 1½ tsp cinnamon, 1¼ tsp baking soda, ½ tsp salt, ¼ tsp cayenne pepper, and 1 cup chocolate chips; mix briefly and set aside. Add 2 large eggs and 1 tsp vanilla extract to the butter-chocolate mixture, then whisk until they are fully incorporated. Gently stir in the flour mixture using a wooden spoon, then pour batter into the prepared pan. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely before frosting.
To make the frosting, beat ½ cup room temperature butter until smooth using a stand or electric mixer. Add a pinch of salt and 1 tsp vanilla extract, then beat again to incorporate. Add 360 g powdered sugar and 2 tbsp milk and beat until smooth and fluffy. Adjust consistency as needed by adding more milk or powdered sugar. Finally, beat in 1 tbsp cinnamon. Frost and garnish cake as desired.
